VEGAN Coconut Banana French Toast

Who would have thought that making Vegan Coconut Banana French Toast could actually be so easy?!

Darsana makes us delicious Vegan Pancakes almost every Sunday, so today I was inspired to try something different.
I’ve always liked french toast more than pancakes, but for some crazy reason it never occurred to me to look up a vegan recipe… until now! Silly I know. But I’m a big believer in perfect timing! :o)
And now I’ve found a new love! ;o)
I knew there had to be an ingredient that would replace the eggs… bananas… and they just happen to be one of my favorite fruits. Booyah!
So here goes… give this amazing Vegan Coconut Banana French Toast recipe a try. I used thinly sliced sourdough bread, which turned out very yummy, but because it was small and a bit thin, I spent more time in the kitchen making enough to fill us up, than enjoying it at the table with the rest of the fam.
So next time I will use larger thick sliced sourdough bread in the hopes that we need less pieces.

Ingredients:

  • 3 ripe bananas
  • 1 cup vanilla coconut milk
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice {optional} (I love Trader Joe’s version)
  • 2 teaspoons vanilla bean or extract
  • sliced bread of your choice {we use fresh baked pan sabao since we’re now in Puerto Rico}
  • vegan butter

Preparation:

Blend bananas, coconut milk, cinnamon, pumpkin pie spice {optional} and vanilla in a food processor (or blender) and pour mixture into a pie dish. Gently dip bread slices into the mix, coating both sides. Lightly saute slices in vegan margarine in medium-hot skillet until golden brown. Serve with a touch of maple syrup topped with fresh banana slices and shredded coconut.
