Vegan Coconut Pumpkin Pie Smoothie

This VEGAN Coconut Pumpkin Pie Smoothie is my all time favorite!

Along with daily meditation and exercise, I believe in starting every day feeding our bodies with LIVE fuel that our bodies can use to create more energizing vitality rather than have to process and breakdown first thing.

So I make our family vegan smoothies for breakfast everyday. If you’ve read about the Radical Roldans then you already know that Darsana {daddy Roldan} is the official chef of our family… but breakfast is the one meal that I do best… so I’m known as the Smoothie Queen.

And because I LOVE all things coconut and pumpkin… this is one of my all time faves!

VEGAN Coconut Pumpkin Pie Smoothie

1 Cup Vanilla Coconut Milk

2-3 Frozen Bananas

1 Small Piece Fresh Coconut {optional}

1 Handful Frozen Pineapple Chunks

1 Teaspoon Cinnamon

1 Tablespoon {I probably use way more} Trader Joe’s Pumpkin Pie Spice – this one depends on how pumpkin you want it to taste and if you don’t have access to Trader Joe’s or it’s not the right time of year, you can try another brand. Trader Joe’s is the only one I’ve used cuz it immediately became my fave for it’s combination of spices, so every fall season when I live near a Trader Joe’s I stock up on 6-10 bottles. 😉

 

Everything we make is off the cuff by site, so all measurements are approximate and this is for one person approximately 16 oz.

Super simple… just blend all ingredients together and INjoy!
